Raclette baguette with gherkin topping

An original snack, prepared with pieces of a baguette stuffed with caramelized onions, melted raclette cheese and a delicious gherkin topping. try also this skyr cake with blueberries recipe too.

Ingredients

Small meal For 4 people

2 large red onions

2 tablespoons of butter

4 tablespoons of raw sugar

2 baguettes of 260 g each

6 herb pickled cucumbers

80 g of celery per rib

½ bunch of dill

1 chilli

3 tablespoons of apple cider vinegar

8 slices of raclette cheese of 50 g each

How to proceed

Preparation: approx. 30 minutes

Cut the onions into thin rings. Melt the butter in the pan. Add the raw sugar and mix. Add the onions, brown them, stirring constantly and caramelize them until they take on a nice golden colour. Set aside. Divide each baguette into 3 pieces, then cut each piece of bread into a book. Finely chop the gherkins, celery and dill. Reduce the chilli into thin rings, and add it to the rest of the topping, to taste with or without the seeds. Mix everything with the apple cider vinegar.

Spread the caramelized onions on the bread. Melt the raclette cheese in the special pan, or in a non-stick pan. Pour it over the bread and garnish with the gherkin topping.
